  • 1/2 cup peach preserves
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/4 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and mix until combined.
  4. In a separate bowl, combine flour, baking powder, and salt; gradually add to the creamed mixture.
  5. Stir in the vanilla extract.
  6. Drop tablespoonfuls of dough onto a baking sheet.
  7. Bake for 12-15 minutes until lightly golden. Allow to cool.
  8. Once cooled, spread peach preserves on the flat side of one cookie and sandwich it with another.
  9. In a bowl, mix together powdered sugar, milk, and almond extract to make the glaze. Drizzle over the filled cookies.
