  • 1 cup peanut butter
  • 1/2 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Add peanut butter, honey, eggs, and vanilla extract; mix until well combined.
  4. In another bowl, mix oats, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool before serving.
