  • 4 large bell peppers
  • 1 pound ground turkey
  • 4 ounces turkey bacon, chopped
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy. Remove and drain on paper towels.
  4. In the same skillet, add ground turkey and cook until browned.
  5. Add rice, black beans, spices, and cooked turkey bacon to the skillet. Stir to combine.
  6. Stuff the bell peppers with the mixture and place them in a baking dish.
  7. Top with shredded cheese.
  8. Bake in the oven for 25-30 minutes until the peppers are tender.

Notes

  • For added flavor, try adding diced tomatoes to the stuffing mixture.
