- 4 large bell peppers
- 1 pound ground turkey
- 4 ounces turkey bacon, chopped
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup shredded cheese
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet, cook the turkey bacon until crispy. Remove and drain on paper towels.
- In the same skillet, add ground turkey and cook until browned.
- Add rice, black beans, spices, and cooked turkey bacon to the skillet. Stir to combine.
- Stuff the bell peppers with the mixture and place them in a baking dish.
- Top with shredded cheese.
- Bake in the oven for 25-30 minutes until the peppers are tender.
