  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup raspberry jam
  • 8 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, and salt; gradually add to the creamed mixture.
  5. Drop by rounded tablespoons onto ungreased cookie sheets.
  6. Using your thumb, make an indentation in the center of each cookie.
  7. Fill the indentation with raspberry jam and drizzle with cream cheese.
  8. Bake for 10 to 12 minutes, or until edges are light golden brown.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
