  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup heavy cream
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sauté until soft.
  3. Add the chicken broth, cooked chicken, mixed vegetables, thyme, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. In a small bowl, mix flour with some cream to make a slurry. Stir into the soup to thicken.
  6. Return chopped turkey bacon to the soup, mix well, and adjust seasoning. Serve hot.
