- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/4 cup heavy cream
- 1/4 cup all-purpose flour
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add onion and garlic, sauté until soft.
- Add the chicken broth, cooked chicken, mixed vegetables, thyme, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- In a small bowl, mix flour with some cream to make a slurry. Stir into the soup to thicken.
