White Bean Soup

This white bean soup is a comforting dish made with turkey bacon, perfect for any occasion.

Ingredients

  • 1 cup dried white beans
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Rinse and soak the beans overnight.
  2. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  3. Add the onion, carrots, and celery to the pot and sauté until soft.
  4. Stir in the garlic and cook for 1 minute.
  5. Add the soaked beans, broth, thyme, and bay leaves.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
  7. Season with salt and pepper, and stir in the chopped turkey bacon before serving.

Notes

  • For a vegetarian option, omit the turkey bacon.
