Veggie Pot Pie Soup

  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup heavy cream
  • 1 cup frozen puff pastry, thawed

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
  2. Add mixed vegetables and cook for another 5 minutes.
  3. Pour in the vegetable broth and add thyme and rosemary. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Stir in heavy cream and heat through.
  6. Serve hot, topped with pieces of puff pastry.
