  • 3 large zucchini
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1/2 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips.
  3. In a bowl, mix ricotta, nutritional yeast, garlic, Italian seasoning, salt, and pepper.
  4. Spread some marinara sauce at the bottom of a baking dish.
  5. Fill each zucchini strip with the ricotta mixture and roll it up.
  6. Place the rolled zucchini in the baking dish.
  7. Top with remaining marinara sauce.
  8. Bake for 25-30 minutes until zucchini is tender.
