  • 4 medium zucchinis
  • 1 cup ricotta-style vegan cheese
  • 1 cup marinara sauce
  • 1/2 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix the vegan cheese, nutritional yeast, garlic, basil, salt, and pepper.
  4. Spread a layer of marinara sauce at the bottom of a baking dish.
  5. Fill each zucchini strip with the cheese mixture and roll them up.
  6. Place the rollatini seam side down in the baking dish.
  7. Top with remaining marinara sauce and cover with foil.
  8. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until golden.
