- 4 medium zucchinis
- 1 cup ricotta-style vegan cheese
- 1 cup marinara sauce
- 1/2 cup nutritional yeast
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix the vegan cheese, nutritional yeast, garlic, basil, salt, and pepper.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Fill each zucchini strip with the cheese mixture and roll them up.
- Place the rollatini seam side down in the baking dish.
- Top with remaining marinara sauce and cover with foil.
- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until golden.
