Vegan Zucchini Lasagna

A comforting and healthy vegan zucchini lasagna that’s easy to make and perfect for everyone.

Ingredients

  • 3 medium zucchinis
  • 2 cups marinara sauce
  • 1 cup cashew cheese
  • 1 cup spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise and sprinkle with salt to draw out moisture.
  3. In a baking dish, spread a layer of marinara sauce on the bottom.
  4. Layer zucchini slices, cashew cheese, and spinach. Repeat layers until ingredients are used up.
  5. Top with remaining marinara sauce and spices.
  6. Bake for 30 minutes, then cool for 10 minutes before serving.

Notes

  • Let the lasagna sit after baking for better slicing.
  • Use a mandolin for evenly sliced zucchinis.
