- 10 corn tortillas
- 2 cups black beans, cooked
- 1 cup corn kernels
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- salt to taste
- 1/4 cup fresh cilantro, chopped
- In a bowl, mix the black beans, corn, cumin, chili powder, garlic powder, onion powder, and salt.
- Add chopped cilantro and mix well.
- Warm the corn tortillas in a skillet for a few seconds on each side.
- Spoon a portion of the filling onto each tortilla and roll them up tightly.
- Brush the outside of each taquito with olive oil.
- Place them seam side down on a baking sheet.
- Bake at 400°F for 15-20 minutes until crispy.
- Serve with salsa or guacamole.
