Vegan Taquitos

Ingredients

  • 10 corn tortillas
  • 2 cups black beans, cooked
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • salt to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, mix the black beans, corn, cumin, chili powder, garlic powder, onion powder, and salt.
  2. Add chopped cilantro and mix well.
  3. Warm the corn tortillas in a skillet for a few seconds on each side.
  4. Spoon a portion of the filling onto each tortilla and roll them up tightly.
  5. Brush the outside of each taquito with olive oil.
  6. Place them seam side down on a baking sheet.
  7. Bake at 400°F for 15-20 minutes until crispy.
  8. Serve with salsa or guacamole.

Notes

  • Feel free to add your favorite vegetables to the filling.
  • These taquitos can be made ahead of time and frozen.
