Vegan Stuffed Shells

A comforting and delicious vegan dish that is easy to make and perfect for any occasion.

  • 12 large jumbo pasta shells
  • 2 cups ricotta-style tofu
  • 1 cup spinach, chopped
  • 1/2 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions.
  3. In a bowl, mix together the ricotta-style tofu, spinach, nutritional yeast, garlic powder, onion powder, salt, and black pepper.
  4. Stuff each cooked shell with the mixture and place in a baking dish.
  5. Cover the shells with marinara sauce.
  6. Bake for 25-30 minutes or until heated through.
  7. Serve warm and enjoy!

Notes

  • Feel free to add other vegetables like mushrooms or bell peppers to the filling.
  • For a spicier kick, add crushed red pepper flakes to the marinara sauce.
