Vegan Pumpkin Wild Rice Soup

A delicious and comforting vegan pumpkin wild rice soup that is perfect for fall.

Ingredients

  • 1 cup wild rice
  • 2 cups pumpkin puree
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 can coconut milk
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add the wild rice and stir for a couple of minutes.
  3. Add vegetable broth, pumpkin puree, ginger, cinnamon, and nutmeg. Bring to a boil.
  4. Reduce heat, cover, and simmer until rice is cooked.
  5. Stir in coconut milk and spinach. Cook until spinach wilts.
  6. Season with salt and pepper, then serve warm.

Notes

  • For a thicker soup, blend a portion of the soup and mix it back in.
  • Garnish with pumpkin seeds for added crunch.
