Ingredients

  • 2 cups pumpkin puree
  • 6 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until softened.
  2. Add garlic, thyme, and sage, and cook for another minute.
  3. Stir in pumpkin puree and vegetable broth. Bring to a simmer.
  4. Add wild rice and cook for 45-50 minutes, or until rice is tender.
