Ingredients

  • 1 block firm tofu
  • 1 cup fresh pineapple, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. In a bowl, mix together soy sauce, olive oil, maple syrup, garlic, and ginger.
  3. Add the tofu to the marinade and let it sit for at least 30 minutes.
  4. Heat a pan over medium heat and add the marinated tofu, cooking until golden brown.
  5. Add the pineapple and cook for an additional 5 minutes.
  6. Sprinkle with cornstarch, stirring constantly until coated.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • For an extra kick, add some chili flakes to the marinade.
  • This dish pairs well with rice or quinoa.
