Vegan Lentil Mushroom Stew

Ingredients

  • 1 cup lentils
  • 2 cups mushrooms, chopped
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and mushrooms, cooking until mushrooms are tender.
  4. Add lentils, broth, thyme, and oregano; bring to a boil.
  5. Reduce heat to low and simmer for 30-40 minutes until lentils are tender.
  6. Season with salt and pepper to taste before serving.
