  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup coconut cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup nutritional yeast
  • 1/4 cup chopped parsley

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add spinach and cook until wilted.
  4. Stir in coconut cream, salt, pepper, and nutmeg.
  5. Add spaghetti and nutritional yeast to the pan and toss well.
