Three Bean Salad

A refreshing and easy three bean salad that’s perfect for summer gatherings.

Ingredients

  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup chickpeas, drained and rinsed
  • 1 cup kidney beans, drained and rinsed
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the green beans, chickpeas, kidney beans, red onion, bell pepper, and parsley.
  2. In a separate bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve cold as a refreshing side dish.

Notes
