  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 1 tablespoon lime juice

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, soy sauce, and fish sauce. Mix well and form into meatballs.
  2. In a large pan, heat a little oil over medium heat and add the meatballs. Cook until browned on all sides.
  3. Add the coconut milk and red curry paste to the pan. Stir to combine and bring to a simmer.
  4. Add bell pepper and cook for an additional 10 minutes until meatballs are cooked through and sauce is thickened.
  5. Garnish with green onions and lime juice before serving.
