- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 can (14 oz) coconut milk
- 2 tablespoons red curry paste
- 1 bell pepper, sliced
- 2 green onions, chopped
- 1 tablespoon lime juice
- In a bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, soy sauce, and fish sauce. Mix well and form into meatballs.
- In a large pan, heat a little oil over medium heat and add the meatballs. Cook until browned on all sides.
