- 2 pounds beef chuck roast
- 1 pound beef short ribs
- 4 cups beef broth
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 tablespoon salt
- ½ teaspoon black pepper
- 12 corn tortillas
- 1 lime, cut into wedges
- 1 cup chopped cilantro
- Prepare the chilies by removing stems and seeds, then soak them in warm water for 15 minutes.
- In a blender, combine soaked chilies, garlic, onion, oregano, cumin, salt, and pepper; blend until smooth.
- Heat a large pot over medium heat and add the beef chuck and short ribs. Brown the meat on all sides.
- Pour the blended chili mixture over the meat, add bay leaves and beef broth, and stir to combine.
- Cover and simmer for about 2 hours, or until the meat is tender.
- Once cooked, shred the meat and soak tortillas in the broth before placing the meat inside.
- Serve tacos with lime wedges and chopped cilantro on the side.
