  • 2 pounds beef chuck roast
  • 1 pound beef short ribs
  • 4 cups beef broth
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon salt
  • ½ teaspoon black pepper
  • 12 corn tortillas
  • 1 lime, cut into wedges
  • 1 cup chopped cilantro

Instructions

  1. Prepare the chilies by removing stems and seeds, then soak them in warm water for 15 minutes.
  2. In a blender, combine soaked chilies, garlic, onion, oregano, cumin, salt, and pepper; blend until smooth.
  3. Heat a large pot over medium heat and add the beef chuck and short ribs. Brown the meat on all sides.
  4. Pour the blended chili mixture over the meat, add bay leaves and beef broth, and stir to combine.
  5. Cover and simmer for about 2 hours, or until the meat is tender.
  6. Once cooked, shred the meat and soak tortillas in the broth before placing the meat inside.
  7. Serve tacos with lime wedges and chopped cilantro on the side.

Notes

  • For extra flavor, consider adding some diced onions and cilantro inside the tacos.
