Taco Crockpot Hashbrown Casserole

A comforting and easy-to-make taco casserole using hashbrowns and cooked in a crockpot.

Ingredients

  • 2 pounds frozen hashbrowns
  • 1 pound ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups shredded cheese
  • 1 can diced tomatoes
  • 2 packets taco seasoning
  • 1 cup sour cream

Instructions

  1. In a skillet, brown the ground beef with onion and bell pepper.
  2. Layer half of the hashbrowns in the crockpot.
  3. Add half of the beef mixture on top of the hashbrowns.
  4. Sprinkle half of the cheese over the beef.
  5. Repeat the layers, finishing with cheese on top.
  6. Cook on low for 6-8 hours.

Notes

  • For extra spice, add jalapeños.
  • Can be made ahead and stored in the fridge.
