  • 1 cup corn kernels
  • 1 cup diced bell pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine sweet potatoes, black beans, corn, bell pepper, and spices. Mix well.
  3. Transfer the mixture to a greased baking dish.
  4. If using, sprinkle cheese on top.
  5. Bake for 30-35 minutes or until the sweet potatoes are tender.
  6. Remove from oven and let cool slightly before serving.
