- 3 cups diced sweet potatoes
- 1 can black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup diced bell pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1 cup shredded cheese (optional)
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine sweet potatoes, black beans, corn, bell pepper, and spices. Mix well.
- Transfer the mixture to a greased baking dish.
- If using, sprinkle cheese on top.
