  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 ounces imitation crab, shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon sesame oil
  • 3 sheets nori, cut into strips
  • 1/4 cup green onions, sliced
  • 1 tablespoon furikake

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear, then cook it with 2 1/2 cups of water according to package instructions.
  3. In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool slightly.
  4. In another bowl, combine the imitation crab, mayonnaise, sriracha, and sesame oil.
  5. Spread the sushi rice evenly in a baking dish and top with the crab mixture.
  6. Sprinkle the nori strips and green onions on top.
  7. Bake for 15-20 minutes, until heated through.
  8. Remove from oven and sprinkle with furikake before serving.
