Stuffed Spaghetti Squash with Broccoli Spicy Italian Sausage and Cheddar Cheese

A delicious and hearty dish combining spaghetti squash, spicy Italian sausage, broccoli, and cheddar cheese.

  • 1 spaghetti squash
  • 1 pound spicy Italian sausage
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half and remove the seeds.
  3. Brush the insides with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper.
  4. Place cut side down on a baking sheet and bake for 30-40 minutes until tender.
  5. In a skillet, cook the spicy Italian sausage until browned.
  6. Add broccoli florets and cook until tender.
  7. Scrape the cooked spaghetti squash strands and mix with the sausage and broccoli.
  8. Stir in shredded cheddar cheese and combine well.
  9. Fill the spaghetti squash halves with the mixture.
  10. Return to the oven and bake for an additional 10 minutes until the cheese is melted.

Notes

  • Feel free to add additional spices to taste.
  • This dish can be prepared ahead of time and reheated.
