- 1 large spaghetti squash
- 1 pound spicy Italian sausage
- 2 cups broccoli florets
- 1 cup cheddar cheese, shredded
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove seeds. Drizzle with olive oil, garlic powder, onion powder, salt, and pepper.
- Place squash cut side down on a baking sheet and bake for 30-40 minutes, or until tender.
- Meanwhile, in a skillet, cook the spicy Italian sausage over medium heat until browned. Add broccoli and cook until tender.
- Once the squash is cooked, scrape the inside with a fork to create spaghetti-like strands. Mix the strands with the sausage and broccoli mixture.
- Stuff the mixture back into the squash halves, top with cheddar cheese, and return to the oven for an additional 10 minutes, or until cheese is melted.
- Serve warm, garnished with extra cheese if desired.
