  • 8 ounces rotini pasta
  • 1 cup fresh spinach, chopped
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the chopped spinach, artichoke hearts, cherry tomatoes, red onion, and feta cheese.
  3. Add the cooled pasta to the bowl and mix gently.
  4. In a separate bowl, whisk together the mayonnaise, garlic powder, lemon juice, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
