- 2 cups sushi rice
- 2 cups water
- 1 pound salmon fillets
- 2 tablespoons soy sauce
- 1 tablespoon Sriracha
- 1 tablespoon mayonnaise
- 1 teaspoon sesame oil
- 3 green onions, chopped
- 1 sheet nori, cut into strips
- 1 tablespoon furikake
- Preheat your oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear, then cook it in a pot with 2 cups of water until tender.
- While the rice is cooking, prepare the salmon by seasoning it with soy sauce, Sriracha, mayonnaise, and sesame oil, then bake it in the oven for 15 minutes.
- Once the salmon is cooked, flake it into a bowl and mix it with the cooked rice and chopped green onions.
- Transfer the rice mixture to a baking dish and top with nori strips and furikake.
- Bake for an additional 10 minutes until the top is crispy.
