Spicy Salmon Sushi Bake

  • 2 cups sushi rice
  • 2 cups water
  • 1 pound salmon fillets
  • 2 tablespoons soy sauce
  • 1 tablespoon Sriracha
  • 1 tablespoon mayonnaise
  • 1 teaspoon sesame oil
  • 3 green onions, chopped
  • 1 sheet nori, cut into strips
  • 1 tablespoon furikake

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear, then cook it in a pot with 2 cups of water until tender.
  3. While the rice is cooking, prepare the salmon by seasoning it with soy sauce, Sriracha, mayonnaise, and sesame oil, then bake it in the oven for 15 minutes.
  4. Once the salmon is cooked, flake it into a bowl and mix it with the cooked rice and chopped green onions.
  5. Transfer the rice mixture to a baking dish and top with nori strips and furikake.
  6. Bake for an additional 10 minutes until the top is crispy.
  7. Serve hot and enjoy!

Notes

  • For extra flavor, you can add avocado on top before serving.
  • Make sure to let the rice cool slightly before mixing with the salmon.
