- 2 1/2 cups water
- 3 tablespoons rice vinegar
- 1 pound cooked salmon, flaked
- 1/4 cup mayonnaise
- 2 tablespoons sriracha
- 1 teaspoon soy sauce
- 1 avocado, sliced
- 2 green onions, chopped
- 1 sheet nori, cut into strips
- Preheat the oven to 375°F (190°C).
- Rinse sushi rice under cold water until it runs clear.
- In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
- Remove rice from heat and let it sit covered for 10 minutes. Fluff with a fork and stir in rice vinegar.
- In a bowl, mix flaked salmon, mayonnaise, sriracha, and soy sauce until well combined.
- Spread the rice evenly in a greased baking dish.
- Top with the salmon mixture and arrange avocado slices on top.
- Bake in the preheated oven for 20 minutes or until heated through.
- Garnish with green onions and nori strips before serving.
