A delicious and comforting take on sushi, this Spicy Salmon Sushi Bake combines fresh ingredients into a hearty dish.

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 3 tablespoons rice vinegar
  • 1 pound cooked salmon, flaked
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 teaspoon soy sauce
  • 1 avocado, sliced
  • 2 green onions, chopped
  • 1 sheet nori, cut into strips

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse sushi rice under cold water until it runs clear.
  3. In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  4. Remove rice from heat and let it sit covered for 10 minutes. Fluff with a fork and stir in rice vinegar.
  5. In a bowl, mix flaked salmon, mayonnaise, sriracha, and soy sauce until well combined.
  6. Spread the rice evenly in a greased baking dish.
  7. Top with the salmon mixture and arrange avocado slices on top.
  8. Bake in the preheated oven for 20 minutes or until heated through.
  9. Garnish with green onions and nori strips before serving.

Notes

  • Adjust the spiciness by varying the amount of sriracha used.
  • For a crunchier texture, broil the top for a few minutes after baking.
