Spicy Butternut Squash Sweet Potato Soup

  • 1 medium butternut squash
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 1 cup coconut milk

Instructions

  1. Peel and cube the butternut squash and sweet potatoes.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until translucent.
  4. Add butternut squash and sweet potatoes, cook for about 5 minutes.
  5. Add vegetable broth, cumin, cayenne pepper, and salt. Bring to a boil.
  6. Reduce heat and let simmer for 20-25 minutes until the vegetables are tender.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in coconut milk and heat through before serving.
