  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

  • 1 lime, juiced
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix coconut milk, curry powder, garlic, lime juice, salt, and pepper.
  3. Add the chicken breasts and marinate for at least 30 minutes.
