Spicy Brazilian Coconut Chicken

  • 4 pieces chicken thighs
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bunch fresh cilantro, chopped

Instructions

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Stir in the red curry paste and cook for another minute.
  4. Add the chicken thighs and sear until browned on both sides.
  5. Pour in the coconut milk and add salt and pepper.
  6. Cover and let simmer for 30 minutes.
  7. Top with freshly chopped cilantro before serving.
