Spicy Beef Eggplant Stew

  • 1 pound beef stew meat
  • 2 medium eggplants, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 2 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger; sauté until softened.
  3. Add the beef stew meat; cook until browned on all sides.
  4. Stir in the diced eggplants, beef broth, diced tomatoes, soy sauce, chili paste, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  6. Add fresh basil and cilantro before serving.

Notes

  • Adjust the spice level by adding more or less chili paste.
  • Serve with rice or bread for a complete meal.
