  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup bell peppers, sliced

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt, pepper, and paprika.
  3. Add chicken to the skillet and brown on both sides.
  4. Remove chicken and set aside. In the same skillet, add onion and garlic, cooking until softened.
  5. Stir in rice and chicken broth, then return the chicken to the skillet.
  6. Cover and simmer for 25-30 minutes until chicken is cooked through and rice is tender.
  7. During the last 10 minutes, add sliced bell peppers on top of the chicken.
