  • 3 pounds beef roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 2 onions, chopped
  • 4 carrots, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef roast with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  4. Add onions, carrots, and garlic, cooking until the onions are translucent.
  5. Pour in the beef broth and add Worcestershire sauce and thyme.
  6. Cover and bake in the oven for 3 to 4 hours, or until the meat is tender and easily pulls apart with a fork.
