  • 4 chicken thighs boneless, skinless
  • 1 cup peanut butter
  • 1/2 cup soy sauce
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes
  • 1 cup spinach, chopped

Instructions

  1. Combine peanut butter, soy sauce, coconut milk, garlic, ginger, honey, and red pepper flakes in the slow cooker.
  2. Add chicken thighs, ensuring they are coated with the sauce.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. In the last 30 minutes of cooking, add spinach to the slow cooker.
  5. Once done, shred the chicken and mix well with the sauce before serving.
