Slow Cooker Lemon Herb Chicken and Rice

A delicious and easy slow cooker recipe for lemon herb chicken served over rice.

Ingredients

  • 4 chicken breasts
  • 2 cups rice
  • 1 cup chicken broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, add chicken breasts, chicken broth, lemon juice, olive oil, thyme, garlic powder, onion powder, salt, and pepper.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through.
  3. In the last hour of cooking, add the rice to the slow cooker.
  4. Once cooked, shred the chicken and mix it with the rice.
  5. Serve warm, garnished with fresh herbs if desired.
