Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 1 cup baby carrots
  • 1 cup bell pepper, sliced
  • 1 medium onion, chopped
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a slow cooker, combine honey, soy sauce, and minced garlic.
  2. Add chicken thighs, carrots, bell pepper, and onion. Stir to coat.
  3. Cook on low for 6-7 hours or on high for 3-4 hours.
  4. Once cooked, remove chicken and thicken sauce with cornstarch mixed with water.
  5. Serve chicken with veggies and sauce poured over the top.
