Slow Cooker Cowboy Casserole

A delicious and hearty slow cooker cowboy casserole featuring turkey bacon, perfect for family meals.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 cup diced onion
  • 2 cups diced potatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • salt to taste
  • pepper to taste

Instructions

  1. In a skillet over medium heat, cook turkey bacon until crispy. Remove and crumble.
  2. In the same skillet, brown the ground turkey until cooked through.
  3. In the slow cooker, combine all ingredients including crumbled turkey bacon and cooked turkey.
  4. Stir to mix well.
  5. Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.

Notes

  • This dish can be topped with cheese for extra flavor.
