1 pound boneless, skinless chicken breasts
1 cup frozen peas and carrots
1 cup celery, chopped
1 cup potatoes, diced
1 can (10.5 oz) cream of chicken soup
1/2 cup chicken broth
1 teaspoon dried thyme
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 package (1 lb) refrigerated pie crusts
Instructions
In the slow cooker, combine chicken, peas and carrots, celery, potatoes, cream of chicken soup, chicken broth, thyme, onion powder, salt, and black pepper.
Cover and cook on low for 6-7 hours or until chicken is cooked through.
Remove chicken, shred it, and return to the slow cooker, mixing it with the other ingredients.
Transfer the mixture to a pie crust, cover with another crust, and seal the edges.
Bake in the oven at 425°F for 30 minutes until the crust is golden brown.
Notes
For a healthier option, you can use whole wheat crust.
Feel free to add other vegetables like corn or green beans.
