  • 1 tablespoon olive oil
  • 1 pound turkey bacon, chopped
  • 1 cup frozen mixed vegetables
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke holes in the baking potatoes and bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat, add turkey bacon, and cook until crispy.
  4. Add onion and garlic to the skillet and sauté until translucent.
  5. Stir in the frozen vegetables, Worcestershire sauce, salt, and pepper; cook for an additional 5 minutes.
  6. Once the potatoes are cooked, slice them open and fluff the insides.
  7. Fill each potato with the turkey bacon mixture and top with mashed potatoes.
  8. Return to the oven for 10-15 minutes until heated through.
