Roasted Sweet Potatoes with Garlic and Parmesan

  • 4 medium sweet potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peeled and cube the sweet potatoes.
  3. In a large bowl, combine the sweet potatoes, olive oil, minced garlic, salt, and black pepper.
  4. Toss until the sweet potatoes are evenly coated.
  5. Spread the sweet potatoes in a single layer on a baking sheet.
  6. Roast for 25-30 minutes, or until tender and slightly caramelized.
  7. Remove from the oven and sprinkle with parmesan cheese and parsley before serving.

Notes
