  • 6 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and cut baby potatoes in half. Place on a baking sheet.
  3. Cook turkey bacon in a skillet until crispy, then crumble it.
  4. In a small bowl, mix olive oil, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper.
  5. Drizzle the dressing over the potatoes and toss to coat.
  6. Roast potatoes for 25-30 minutes or until golden brown.
  7. Once roasted, let them cool slightly, then add the bacon and parsley.
  8. Toss everything together and serve warm or at room temperature.
