Ingredients

  • 2 pounds carrots
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil
  • 2 tablespoons hot honey
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, then cut them into uniform sizes.
  3. Toss the carrots with olive oil, salt, and black pepper.
  4. Spread the carrots on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  5. While the carrots roast, whip the ricotta until smooth and creamy.
  6. Once the carrots are done, plate them and dollop with the whipped ricotta.
  7. Drizzle hot honey over the top and garnish with fresh herbs.

Notes

  • For extra flavor, add garlic or herbs to the roasting carrots.
  • Whipped ricotta can be made ahead of time and stored in the fridge.
