1 cup unsalted butter, softened
2 cups powdered sugar, divided
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup raspberry preserves
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the butter and 1 cup of powdered sugar until smooth.
Add in the vanilla and almond extracts, mixing until well combined.
Gradually blend in the flour and salt until the mixture is crumbly.
Take about 1 tablespoon of dough and flatten it, placing 1/2 teaspoon of raspberry preserves in the center. Fold the dough over the preserves and roll into a ball.
Place the cookies on a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until the bottoms are lightly golden.
Let cool for a few minutes, then roll in the remaining powdered sugar.
