Quick Taco Pasta Salad

A quick and easy taco pasta salad recipe perfect for busy nights.

Ingredients

  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese
  • 1 cup ranch dressing
  • 1 cup diced bell pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the macaroni according to package instructions; drain and set aside.
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add taco seasoning and water as per packet instructions. Simmer for 5 minutes.
  4. In a large bowl, combine cooked macaroni, beef mixture, tomatoes, corn, black beans, cheese, ranch dressing, bell pepper, and cilantro.
  5. Toss until well mixed and serve immediately, or chill in the refrigerator before serving.

Notes

  • Feel free to substitute ground turkey or chicken for beef.
  • Add avocado for extra creaminess.
