- 1 box jumbo pasta shells
- 1 cup pumpkin puree
- 1 cup gouda cheese, shredded
- 1/2 cup ricotta cheese
- 1/4 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried sage
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups marinara sauce
- 1 tablespoon olive oil
- Preheat your oven to 350°F (175°C).
- Cook the pasta shells according to the package instructions until al dente, then drain and set aside.
- In a mixing bowl, combine pumpkin puree, gouda cheese, ricotta cheese, garlic, sage, nutmeg, salt, and pepper until well blended.
- Fill each pasta shell with the pumpkin and cheese filling.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Arrange the filled shells in the dish and top with the remaining marinara sauce.
- Drizzle olive oil over the top.
- Bake in the oven for 25-30 minutes until heated through and golden.
