Pumpkin & Gouda Stuffed Shells

  • 1 box jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup gouda cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta shells according to the package instructions until al dente, then drain and set aside.
  3. In a mixing bowl, combine pumpkin puree, gouda cheese, ricotta cheese, garlic, sage, nutmeg, salt, and pepper until well blended.
  4. Fill each pasta shell with the pumpkin and cheese filling.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Arrange the filled shells in the dish and top with the remaining marinara sauce.
  7. Drizzle olive oil over the top.
  8. Bake in the oven for 25-30 minutes until heated through and golden.

Notes

  • For added flavor, you can sprinkle more gouda cheese on top before baking.
  • This dish pairs well with a side salad.
