12 large jumbo pasta shells
1 cup pumpkin puree
1 cup gouda cheese, shredded
1/2 cup ricotta cheese
1/4 cup grated parmesan cheese
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon nutmeg
2 cups marinara sauce
1 tablespoon olive oil
Instructions
Preheat the oven to 375°F (190°C).
Cook the pasta shells according to package instructions, drain and set aside.
In a bowl, mix together pumpkin puree, gouda cheese, ricotta cheese, parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and nutmeg.
Fill each pasta shell with the pumpkin and cheese mixture.
In a baking dish, spread half of the marinara sauce on the bottom.
Place the filled shells in the dish and top with the remaining marinara sauce.
Drizzle olive oil on top.
Bake for 25-30 minutes, until bubbly and golden.
