  • 4 large eggs
  • 1 can (15 ounces) pumpkin puree
  • 8 ounces cream cheese, softened

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in pumpkin, vanilla, cinnamon, nutmeg, ginger, and salt until fully combined.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 50 to 60 minutes, or until the center is set.
  7. Allow to cool before refrigerating for at least 4 hours or overnight.
