1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
2 cups cream cheese
1 cup pumpkin puree
1 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
½ teaspoon salt
1 cup flour
½ cup brown sugar
½ cup rolled oats
½ teaspoon baking powder
Instructions
Preheat the oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a baking dish.
In another bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla, and spices. Mix well.
Pour the cheesecake mixture over the crust and smooth the top.
In a separate bowl, combine flour, brown sugar, oats, and baking powder. Sprinkle over the cheesecake layer.
Bake for 35-40 minutes until the edges are set. Let cool before cutting into bars.
Notes
Make sure to use canned pumpkin puree, not pumpkin pie filling.
