Protein Banana Pudding

A delicious and nutritious protein-packed twist on traditional banana pudding that satisfies your sweet cravings without the guilt.

Ingredients

  • 2 ripe bananas
  • 1 cup non-fat Greek yogurt
  • 1 scoop vanilla protein powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/2 cup almond milk

Instructions

  1. In a mixing bowl, mash the bananas until smooth.
  2. Add the Greek yogurt, protein powder, honey, and vanilla extract to the mashed bananas and mix well.
  3. In a saucepan, combine the cornstarch and almond milk. Cook over medium heat, stirring constantly until it thickens.
  4. Once thickened, remove from heat and let cool for a few minutes.
  5. Combine the thickened mixture with the banana mixture, stirring until smooth.
  6. Layer the pudding in serving cups and refrigerate for at least 30 minutes before serving.
